My favorite cheesecake

After endlessly speaking about cheesecake, I think is time I share my favorite recipe ever. I found it on Internet and slowly shifted towards what I liked best. I encourage you to try it and become as obsessed as I am with it. Enjoy!
Note: This recipe contains nuts that are optional and dairy products. I've never tried making the vegan version of this, but if you do it, please let me know!

You will need...
a whisk or mixer, a round mold (20cm aprox), parchment paper (optional), a bowl, a spoon, a small pan.
Ingredients (for 8-10 servings)
- 100g peanuts (optional)
- 100g butter
- 350g Digestive biscuit (or similar biscuits )
- 500g Philadelphia cheese (or similar cheese spread)
- 100g sugar
- 400g liquid cream (for baking, 35% fat)
- 25g curd powder (or flavorless gelatin)
- 300g red fruit jam (or the one you like most)
Directions
1. Crush the biscuits into small pieces and mix them with the butter and peanuts.
2. Prepare the mold by covering it with Parchment Paper, trying not to wrinkle it
3. Cover the bottom of the mold with the biscuit mix, slightly pressing it down. Set aside for cooling into the fridge
4. Slowly heat the liquid cream, starring it continuously while adding the sugar and spread cheese. Avoid lumps. For better results, use the mixer.
5. When it starts to boil, add the curd powder and mix it well. This is crucial step, since if the mix doesn’t boil, the cake will not set and it will be semi-liquid.
6. Take the mold and pour with care the liquid mix. Set for cooling in the fridge at least for 6 hours.
7. Decorate the cake with the jam. Serve cold.
